Nikolai Castoro and Chef Enrique Martinez created Coa De Jima to fill a need in Boise’s restaurant scene. They envisioned Jima to both educate and enhance the most discerning palates. Their mission is to serve upscale authentic Mexican food-with an exotic twist. Coa De Jima stands as an invitation to indulge in this duo’s passion for excellence in fine dining.

Nikolai Castoro (son of Barbacoa creators Robert and Martine Castoro) grew up in the restaurant business. Before returning to Boise to manage Barbacoa five years ago, he was Manager at the St. Regis and the Montage in Laguna Beach.

Chef Enrique Martinez designed and inspired the flavors and dishes of Coa De Jima. Enrique has been with the Castoro family as Executive Chef for 25 years. Also to his credit, Enrique hailed as the executive chef of “Towers” restaurant in the five star resort, The Surf & Sand Hotel in Laguna Beach, California.

Martine Castoro has created a spectacular downtown oasis in Jima where you will find an eclectic, stylish blend of Latin antiques and antiquities as well as one of a kind local art creations.
